Wintertime Snacks

The snow is falling this week, so beautiful. We stocked up on library books and books-on-tape this morning, and made sure we had the supplies for what is surely one of our favorite winter snacks - popovers with apples. Local apple butter is our perennial favorite, but the other day I cooked up some skinned apples with a little water and some cinnamon and we stuffed them into the little pocket inside the popovers...oh wow. Very very very very good. Those pockets are so handy...

Popovers (this recipe is from Pretend Soup, by Molly Katzen - we love this cookbook)

Preheat the oven to 375 degrees

Beat 2 eggs with 1 cup of milk.
Add 1 cup flour and 1/4 tsp salt. Stir these in, but do not get crazy about getting it smooth. Part of the magic is in the lumps.

Butter a muffin tin well, and fill 2/3 of the way up with the batter.
Bake in the oven - and, this is the other part of the magic, do not even think about opening the door to see how they are doing!! - for 30 minutes.
Take out and poke with a fork to let the steam out. If you don't, they will still taste delicious, but you will want to call them...Soggyflops or something. Not Popovers.

Gently stick a little butter or apples or apple butter or something else that will make your heart sing on this snowy day, into the small pocket inside and take a bite. Don't forget to make yourself something good to drink with these...they go great with warm apple cider (apples!) or some Bengal Spice tea...
